Now we?re concerned about every last detail ? from the beans? country of origin and whether they are organic, have been shade-grown and traded fairly to the degree of roasting and how much pressure was applied during brewing. Yet for all of this connoisseurism, how much do we understand about the science of coffee?

?Coffee?s main attributes are bitterness, acidity and body, also known as mouth-feel,? according to Ronald Pegg, a food science professor at the University of Georgia who teaches an introductory course on coffee. ?The key is to get these three attributes in balance.?

As coffee makes its way from tree to mug, producers must keep this balance in mind. It?s not an easy task, because coffee contains more than 1,000 chemical compounds, according to research by Thomas Hofmann of the Technical University of Munich and Oliver Frank of the University of Muenster.

Consider the first element, the bean. There are 70 species of coffee, but two dominate the market: coffea arabica, the more common variety native to Ethiopia, and coffea canephora, also known as coffea robusta, a more disease-resistant plant. Arabica is almost universally acknowledged as the superior variety, although blends often contain robusta because it?s cheaper and adds a strong bitterness that some coffee drinkers enjoy in small doses.

There are several chemical differences between the two varieties. Arabica has 60 percent more fat than robusta ? and taste-testers typically favor coffee made from beans with more fat. Fat also helps during the production process because it creates a more even roast. Arabica beans also have a higher concentration of sugar.

To understand why a sugary bean makes a better brew, we have to consider roasting.

Freshly picked coffee beans have virtually no flavor. Roasting is what makes coffee palatable. The roasting process triggers a long list of chemical reactions. One is caramelization, the breaking-down of sugar, which contributes to coffee?s brown color. Roasting also creates compounds that contribute to coffee?s unique flavor and aroma, including diacetyl, which adds a butterscotch flavor, and furans, which contribute a nutlike taste.

Roasting also generates what are known as Maillard reactions. Named after the French chemist Louis Camille Maillard, these complex reactions occur when heat is applied to amino acids in the presence of sugars. Like caramelization, they are responsible for browning and for the production of hundreds of chemicals that, in combination, give unique flavors to cooked meats, baked breads, dark beers, toast and coffee. Since arabica beans have about twice as much sugar as the robusta variety, the roasting process generates a fuller and more complex variety of Maillard reactions in them than it does in robusta, making for a more interesting taste in the coffee.

Roasting is a touchy business, though. High heat can also overproduce bitter compounds and ruin the drink. For many years, food scientists believed that caffeine was the main source of bitterness in coffee. While it?s true that pure caffeine has a bitter flavor, it?s present in such low proportions in an average cup of coffee that it contributes only a small amount of flavor.

In fact, coffee bitterness is attributable to a family of chemicals known as chlorogenic acids, which are also present in tea, peaches and prunes. Chlorogenic acids aren?t bitter themselves, but, when roasted, they transform into two related chemicals ? lactones and phenylindanes. Lactones give a pleasant, soft bitterness. Phenylindanes are more powerful and harsh, and are present in higher concentration in dark roasts.

Getting the roast right is still more art than science. Expert coffee roasters must constantly pull sample beans out from the heat to check the color and aroma. These markers are actually proxies for the concentration of lactones and phenylindanes. Food scientists are working on ways to make the process more scientific. One day, perhaps, instead of asking your barista for medium roast or dark roast, you?ll ask for a precise balance of lactones and phenylindanes. (And you thought coffee orders couldn?t get any more complicated.)

Just as there is science to bean selection and roasting, there?s also a little bit of science in brewing and drinking coffee.

How much of the coffee ends up in the cup depends on the brewing method chosen. Percolators and drip machines are extremely inefficient at transferring chemicals from bean to beverage. The final result is only about 1.3 percent coffee; the rest is water. That?s okay if you like a coffee with mild flavor and body, but many find that extraction rate rather weak. French-press (or plunger pot) coffee is similarly mild, but it is high in oil content, providing a body that some drinkers prefer. (French-press enthusiasts should be advised that those oils may elevate cholesterol levels.) On the other end of the spectrum are espresso machines, which force the coffee compounds into the water. Espresso is more than 5 percent coffee bean. These differences affect not only flavor but also the perception of body and mouth-feel.

No matter which brewing method you select, drink your joe immediately. As hot coffee sits, those lactones break down into acids. The pH of brewed coffee can drop 15 percent in an hour or so, throwing off the acidity-bitterness-body balance so crucial to a good cup of coffee.

Despite an arsenal of drugs, millions of people in the United States can?t get their blood pressure down to safe levels. Now, in a high-stakes experiment at dozens of hospitals, scientists are testing a dramatically different approach for the toughest to treat patients, by burning away some overactive nerves deep in the body that can fuel rising blood pressure.

To attempt an invasive treatment ? a catheter is threaded through blood vessels in the groin up to the kidneys ? reflects doctors? frustration with a disease that too often is underrated because people with it don?t look or feel sick until a lot of damage has been done.

Pharmaceutical therapies have been the cornerstone of medicine for nearly a century, offering convenient, noninvasive treatment for countless diseases. But when it comes to some of the most stubborn chronic conditions, including diabetes, obesity and hypertension, medications too often aren?t enough.

Researchers increasingly are trying medical devices and minimally invasive surgeries to help, such as stomach-shrinking techniques that improve obesity-caused diabetes and the new hypertension experiment.

?I think we have to hit on all cylinders if we?re going to take on these very important diseases,? said Dr. Steven Nissen, chair of the Cleveland Clinic?s department of cardiology. ?There are many examples where this convergence is taking place, where you push the drugs as far as you can, but when they can?t go any further, you step in with more invasive approaches.?

Cardiologists? interest in the nerve-zapping procedure also reflects how severe the burden of hypertension is poised to become, with many middle-aged boomers already affected.

?People are living longer with hypertension, and the disease tends to get worse as you get older,? said Dr. Suzanne Oparil, a hypertension specialist at the University of Alabama, Birmingham. ?The complications pile on later.?

If deadening kidney nerves sounds like a strange way to attack hypertension, consider that nerves in the body?s ?fight or flight? system play a role in signaling kidney functions, which in turn help regulate blood pressure, such as by relaxing or tightening key arteries.

?If there was a snake in the room, all of our blood pressures would go up, appropriately so,? explained interventional cardiologist Dr. Manesh Patel of Duke University, one of more than 60 medical centers around the country studying Medtronic Inc.?s nerve-zapping procedure.

But sometimes those nerves stay switched on when they shouldn?t be, something today?s medications can?t address. The hope is that destroying a small number of the nerves could calm an overactive system, relaxing arteries and lowering blood pressure.

?Interrupting that signal makes physiologic sense,? Patel said, adding that some patients have driven hundreds of miles to see if they?re candidates. ?There?s a large unmet need.?

Some 78 million people in the country, about 1 in 3 adults, have high blood pressure, meaning readings of 140 over 90 or higher. An additional 27 million people will have it by 2030, says a grim forecast from the American Heart Association. That?s because the population is getting fatter and older. In fact, about half of people in their 50s have high blood pressure but by age 75, three-fourths do.

?If people live long enough, the vast majority are going to have hypertension,? says Dr. Michael Mussolino of the National Institutes of Health?s cardiovascular division.

Only about half of patients have their hypertension under control. Most need multiple drugs to treat it. Some 10 percent, more than 7 million people like Ezzell, have the resistant hypertension that is the initial target of the nerve-zapping procedure ? people with high blood pressure despite three or more different kinds of medications.

Renal denervation, the procedure being promoted by Minneapolis-based Medtronic and other companies, has its roots in primitive nerve-severing operations performed in the 1950s, which often lowered blood pressure but at the expense of permanently injuring patients. Only in recent years have researchers revisited the technique, after companies developed easy-to-use catheters that can beam radiofrequency waves to burn away specific nerves without damaging the surrounding blood vessel.

It?s aimed at only the hardest-to-treat patients. In small Medtronic studies, those treated saw the key top number of a blood pressure reading drop an average of 33 points, although they still needed their medications. Medtronic reported in March that the improvements were lasting up to three years. The company?s Symplicity catheter is approved to treat hypertension in Europe and Australia, as are some competitors? versions.

The U.S. Food and Drug Administration required a more rigorous study, now enrolling more than 500 people, that includes an unusual step to prove if it really works. Some patients receive the real procedure and some get a fake ? just the catheter, no zapping. Patel describes patients wearing a blindfold and earphones while lying sedated on the treatment table, to ensure they don?t know which they?re getting.

Although pilot studies show few side effects, potential risks include bleeding, an injured blood vessel, immediate blood pressure or heartbeat problems, or complications from medications used in the procedure.

Ezzell?s systolic pressure, that top number, hovers around 190 and sometimes jumps to a super-dangerous 230, despite his six daily drugs.

?The doctors seemed at wit?s end as to what to do about it,? says Ezzell, 74, of Jacksonville, N.C. So he got on the Internet, tracking down the Medtronic study at Duke, about two hours away.

Ezzell was treated this month and is waiting to see if his blood pressure drops, which earlier research shows happens gradually over six months.

Cardiologists are excited by the early findings, said Dr. Gordon Tomaselli, the heart association?s president.

But ?what we don?t know is the long-term effect? of nerve zapping, Tomaselli cautioned. ?It?s going to take a little bit of time to make sure there are not adverse effects two years, three years, 10 years down the line.?

In the last three years, the FDA has approved similar catheters that beam radio waves to treat asthma and a type of irregular heartbeat, conditions traditionally treated with medications.

More than five dozen companies are pursuing devices for hypertension, from catheters similar to Medtronic?s to permanent implants left in arteries to regulate blood pressure.

In Europe, Medtronic?s hypertension procedure costs about $14,000, sticker shock compared with the generic prices of standard hypertension medications and another reason for careful study to prove its effects.

Gwen Dirks, 71, of Virginia, Ill., was grateful to get the procedure in an early study. Her blood pressure was 200 over 120 despite two drugs.

?I?ve been on medications since I was 40,? Dirks said. ?Over the years I have tried many different things and got to the point where they no longer worked.?

Two years after her experimental treatment, Dirks says her blood pressure is stable at about 130 over 80, although she continues to take her medications.

How to kill time productively on your smartphone

The smartphone has made killing time when you're standing in line easy, but instead of launching another bird into the sky you can turn those two-minute spurts of non-activity into productive moments. Doing so will help you rid the most annoying and tiny daily tasks in your downtime. Here are a few ideas for doing just that.

You'll find plenty of great productivity apps on smartphones, but actually using them isn't always the easiest option. After all, when you're waiting around for a plane or killing time at the DMV it's a lot easier to just boot up Facebook and screw around for a few minutes. Still, you can get a surprising amount of things done in just a couple minutes, starting with your email.

Process your inbox: Answer everything you can respond to in two minutes or less
Chances are you have a few emails you haven't responded to because they're just simple questions. It's those emails you avoid because they're just so easy, but they end up piling up as the day goes along. You can find these emails quicker by getting everything organized. The trusted trio is a great way to start, but if you want another option you can keep it even simpler by setting up specific labels in Gmail called Kill Time (and if you need help with labels we've got you covered). Throughout the day just throw in those easy to reply emails you leave sitting around and then bang them out when you're waiting around later.

However you choose to do it the purpose is the same: filter off a few emails a day into a folder where you can quickly pull them up on your phone and kill some time answering them.

Bake phone?tasks into your to-do's
If your to-do list is anything like mine then it probably has a ton of simple, quick tasks scattered throughout it. These include things like making quick phone calls, sending emails, researching a simple topic or even ordering some new shoes. Instead of keeping these short tasks inline with more complicated to-dos, bake in a special phone list filled with everything you can do from your phone.

If that's not possible, take those couple of minutes to sit down and prune items from your to-do list. Eliminate tasks you can't get to, reorganizing others, or whatever it takes to make your list manageable.

Brainstorm freely with no purpose
This is a little more abstract, but taking advantage of those moments when you're bored is a great way time for creativity (and productivity). We've seen before that being bored is actually good for creativity and it's easy to do on the go.

You can do this anyway you like, with a text editor, drawing app or anything else. Personally, I use the iOS app Mindjet because I love mindmapping. The idea is that you just write down all the ridiculous ideas you have while you're bored with no thought for how bad they are and then return to them later to pick out the good ones.

Give your brain a workout
Another option is stuff a little brain training into those moments. We know brain games don't make you smart, but some games, logic puzzles and other exercises still benefit your brain. Crossword puzzles are thought to combat Alzheimers and they're readily available for nearly every smart phone. If crosswords aren't your thing, nearly every digital device on the planet has Tetris available on it and Tetris is known to expand your brain.

You can also take that time to learn something new. The variety of Wikipedia apps are a great way to kill some time while still learning something. Just fire it up, select a random article and you're on your way to learning something new instead of killing time.

The ideas here are pretty simple. Instead of killing time being bored, turn that time into something productive. Make it easy on yourself by separating all those tasks ahead of time so you can pop in, take care of a few things, and pop right back out. Have your own time killing tips? Bass erupts for Celtics in 101-85 win over Sixers

BOSTON (AP) ? They started as a Big Three and grew to a Big Four when Rajon Rondo earned the right to be mentioned along with the other Boston Celtics All-Stars.

At no point, however, did Brandon Bass merit marquee billing in his first season in Boston.

The fifth, newest and least-heralded member of the Celtics' starting lineup, Bass erupted for a career playoff-high 27 points on Monday night, scoring 18 in the third quarter as Boston pulled away from the Philadelphia 76ers to win 101-85 and take a 3-2 lead in the Eastern Conference semifinals.

"We've got a few good players on the team that they had to focus on," said Bass, who left the game to a standing ovation with 2 minutes left and Boston leading by 18. "That left me open, and I was able to take advantage of my opportunity."

The 27 points matched Bass' regular-season career high, and the 18 points in the third was one off his career playoff high for an entire game. It was also more than the Sixers scored in the quarter as a team.

"It was one of those games we needed something to ignite us together," Celtics coach Doc Rivers said. "I thought the biggest difference was his energy. He played with a force. I thought he just let himself go."

Kevin Garnett added 20 points and Rajon Rondo had 13 points and 14 assists for the Celtics, who can advance to the East finals with a victory in Philadelphia in Game 6 on Wednesday. The Sixers would need a win at home to force the series back to Boston for a decisive seventh game.

As he walked to his postgame interview, Elton Brand told the Celtics' ball boys in the hallway outside the locker rooms: "See you on Saturday."

No team has won consecutive games yet this series.

"It would just be nice to win two in a row. That would be terrific," Rivers said. "It's not going to be easy. This series has been hard. Every minute, you think we're leaking oil physically."

Brand scored 19 and Evan Turner had 11 points and 10 rebounds for Philadelphia, which led by six points early in the third quarter before Boston scored 14 of the next 16 points. Bass had eight of them, including back-to-back dunks followed by a steal that set up Ray Allen's fast-break layup to give the Celtics a 63-57 lead with five minutes left in the quarter.

Boston closed out the third with a 10-2 run over the final 3 minutes and outscored the Sixers 28-16 in the period. The Celtics also scored 16 of the first 22 points in the fourth quarter ? seven from Rondo ? to put away the game.

"We had too many turnovers and that just got those guys going," 76ers center Spencer Hawes said. "They got a couple of easy baskets in transition off our mistakes. It got them going, they took advantage of it and held home court. Now we have to go home and take care of ours."

The Celtics acquired Bass in December in a trade with Orlando for Glen "Big Baby" Davis, and he worked his way into the starting lineup after the All-Star break. Although he solidified the power forward position after Garnett moved to center, he hadn't done anything spectacular ? until Monday.

Bass hadn't scored more than 22 points in a game this season. His playoff high was 19 points, in 2008.

Paul Pierce had 16 points ? a perfect 9 for 9 from the free throw line ? and Allen, back in the starting lineup because of an injury to Avery Bradley, had five points.

Boston tied it 57-all when Bass stole the ball from Thaddeus Young and got to the free throw line, making both foul shots. After a Sixers miss, Rondo found Bass underneath for the dunk. Bass added another crowd-pleasing dunk before knocking loose a ball to start Rondo on a fast break he finished by finding Allen for the layup.

Scientist at Work Blog: More to Learn About Dolphin Whistles

Instead of spending the morning loading equipment onto boats and conceptualizing our follow strategy for the day, we spent it cleaning our motel rooms and preparing to leave. We enjoyed winding down at the farewell barbecue last night. The weather was perfect for a cookout: warm and slightly breezy. I particularly enjoyed eating my first hot meal in five days: two burgers and a hot dog. Our packed lunches on the boat had to be portable, sturdy and compact, which means our lunchboxes were filled with sandwiches and cereal bars. By dinnertime, I was always so exhausted that I couldn?t bring myself to eat more than cereal and milk.

After we had settled down with food, our program director, Randall Wells, gave us a final debriefing about the week?s work. I was happy to hear that we had sampled and examined 16 dolphins in this round of fieldwork ? in a typical field week, we find 10 to 15. Of these 16, four were high-priority animals that we had previously not had a chance to look at: FB274, FB233, FB276 and Boomer. I also found out that one of the dolphins we had thought was female was actually male ? thankfully, he had been given the versatile name Pat.

But even in the revelry of the farewell party, we had work left to do. In the evening, my supervisor, Laela Sayigh, and I hosed down the field gear for storage over the next few months and organized equipment back at the Sarasota Dolphin Research Program base.

Today, I will board a plane to go to Oxford University to finish my term abroad, armed with the skills I have gained from my stint with a professional scientific society. In June, I head to the Woods Hole Oceanographic Institution under a generous fellowship, where I will use the data from this trip as well as previous data from the Sarasota dolphin whistle database to better understand whistle copying in bottlenose dolphin calves. I also hope to participate in another field session in Sarasota Bay with the Sarasota Dolphin Research Program.

There is a lot about the field that I will miss when I get back to Oxford: the front-seat view of the dolphins I am studying, the warm Florida weather and especially the camaraderie I developed with my teammates. I was rather starstruck when I first arrived in Sarasota; many of the field scientists I met on my first day are the authors of papers I have been reading at university all year. As I read those papers, I would never have guessed that I would soon sit on a boat with the authors talking about current research and how our findings of the day fit in with previous work.

One of the most interesting conversations I had was with a marine acoustics specialist, Vincent Janik, about a debate he was involved in some years ago about whether signature whistles actually exist. Two other biologists had proposed that signature whistles were a fallacy. They claimed that dolphins share one predominant whistle type, with some individual differences when the dolphins are in isolation, as opposed to each individual dolphin having its own distinctive whistle. They also suggested that previous work on these whistles used biased data and inferior whistle classification techniques. Vincent and his colleagues re-evaluated the vocalizations of several Sarasota Bay dolphins and confirmed that signature whistles are, in fact, present in these animals? vocal repertory. After examining the literature and existing data, I am convinced of the same.

But not all the conversations I have had are with biologists or vets. There are many people on this trip whose day jobs are entirely separate from their work in Sarasota. James Thorson, for example, works as a lawyer when he isn?t volunteering with dolphin research projects in Sarasota, Argentina or Brazil. Encountering people like James showed me that anyone can be a natural scientist, no matter what their background, simply by paying attention to detail, being persistent and working well with others. And a little intellectual curiosity goes a long way ? the Sarasota Dolphin Research Program wouldn?t exist if Blair Irvine and Randall Wells,?then a high school student, hadn?t wondered over 40 years ago whether the dolphins they saw in Sarasota Bay lived there all year round. We can forever be students of the natural laboratory around us if we choose to be, and are lucky to have such a rich tapestry of life and nature almost anywhere we look.
